Caramel Apple is the kettle that goes louder in the fall and never fully goes away. I do a brown-butter caramel reduction, throw in a green-apple reduction on the side, and toss the popcorn in both — caramel first, apple second — so the finish is tart over sweet. It is the bag my niece orders by the case around Halloween, and it is the one that surprises people who think caramel is a one-note flavor.
